Moncaito is a Manchego style, aged cheese that is very smooth, rich and creamy. Aged a minimum of 2 months, this cheese brings out the best in our sheep milk. Named after our first daughter, we hope this cheese can live up to its name. Available in 4 oz., 8 oz., 16 oz., or wheel.
